A variety of savoury dishes. It is suitable for game, braised beef, sharp cheeses, pâtés and terrines. Also makes a delicious addition to any chocolate-based desserts.
The cherries comes exclusively from our oldest orchard at Frederiksdal estate, Nielstrupmark. The character is very much defined by a straight and nearly fragile cherry flavour given by the old cherry trees. In the fall of 2018, the trees at Nielstrupmark were felled due to age. The trees turned 25 years old, which is a relatively high age for trees used for production. New trees have been planted to replace the felled ones.
Reserve requires an increased level of fruit maturity to ensure the ageing potential of the wine. After harvesting the cherries are spontaneously fermented on skin and stones for 3-5 days and finished on steel tanks. Thereafter, the wine is stored for 18 months on French oak barrels. Frederiksdal Reserve is a blend of several vintages, where only the best barrels are stored in a Frederiksdal Reserve. On average, the wine has aged for 30 months on old 300- and 400-liter French oak barrels as well as large, old 600 liter port wine barrels – the so-called “pipes”. The long storage adds extra depth and notes of coffee and chocolate and discrete aromas of cherries and raspberries. All in all, Reserve is the wine from Frederiksdal that comes closest to a well-stocked less sweet port wine.
